Cleaning and sanitizing all brewery brewing equipment is one thing you can do to ensure your beer doesn’t go bad. Failure to clean and sanitize your equipment can ruin your beer. The last thing you want is to spend valuable time and ingredients brewing beer only to have it ruined by preventable contamination. Make it a habit to double-check cleanliness and hygiene to make sure everything is up to par. Proper sanitation is the difference between the best homebrew and one so bad it ends up down the drain. This is the easiest step to making the best-tasting beer.

How to disinfect equipment?

Clean refers to dirt, grime, and visible stains. This is the same level as cleaning crockery and cutlery. Everything used in the brewing process should be spotless, free of dust or grease. Be careful to avoid using hard scouring pads or anything that might scratch the surface when cleaning plastic items, as these small scratches are ideal places for microorganisms to hide.

Means reducing any potential sources of microbial spoilage to irrelevant levels. That said, you want to remove things you can’t see to cut the chance of anything ruining your lovely drink. This is an integral part of brewing.

Sterilize

That is to destroy all life forms on the object. Unless your home brewing setup is located in a hospital clean room and you’re wearing airtight gear, the space you’re brewing in will not be sterile.

How to clean brewing equipment?

  • Add cleaning solution
  • Shake the fermenter to stir or agitate the solution
  • Soak for a few minutes to loosen caked materials
  • If the fermenter is metal or plastic, use a non-abrasive cloth or sponge to clean it. If your fermenter is glass, you can use an abrasive sponge or a large bottle brush.
  • Soak any other items in the cleaning solution, including transfer tubes, airlocks, rubber plugs, gaskets, etc.
  • Rinse everything in cold water and dry before storing.

How to disinfect brewing equipment?

  • After the equipment is cleaned, it can be disinfected
  • Inject disinfectant into the fermenter according to the instructions on the package.
  • Seal the fermenter and shake well to cover the surface area. Shake for at least a minute.
  • Sanitize other brewing and fermentation accessories with disinfectant for 60 seconds. (Thermometer, funnel, airlock, transfer tube, etc.)
  • Have all equipment dried with clean paper towels and discard the disinfectant.
    NOTE: Most homemade sanitizers do not must rinsing as they are safe for contact with beer.

CIP cleaning

You use hot enough water, a good detergent and no threaded equipment, CIP saves time and works great.

True CIP is the process of using a pump to circulate hot brewery cleaning through all kettles, fittings, pipes and coolers without damaging or disconnecting anything between batches.

Precautions

  • When using the following chemicals, please follow the instructions on the packaging.
  • Wear rubber gloves and watch out for spills when handling anything stronger than washing up liquid.
  • When diluting chemicals, always add the chemical to the water, not the other way around.
Use a cleaner/disinfectant to clean everything immediately after use for extra peace of mind, and then disinfect equipment before it needs to be used. It would be even better if you have a no-rinse sanitizer solution that can be placed for blenders etc during the brewing process.
