Do you need automation?

How to control the temperature of the mash?

For the brewhouse equipment itself, I suggest using automated control to provide the equipment with the ability to do step-by-step mashing. Controlling the temperature of the mash will improve filter loss, allowing you to brew a more styled beer.

Is a single primary heat exchanger enough?

Most Chinese brewery equipment manufacturers provide a two-stage heat exchanger that uses tap water and glycol to cool the wort entering the fermenter. In contrast, Micet Craft prefers to use a single-stage heat exchanger with a cold liquid tank (CLT) filled with cold water.
When you have a whole tank of cold water, it can be used to cool the wort through a heat exchanger. The cold water is now hot (“takes away” heat from the wort in the brewing pot) and is collected in your hydrothermal tank, which facilitates energy recovery and reuse. This means that you will have a lot of ready-made hot water, which is ideal for continuous brewing. Also, it requires the pressure of the glycol cooling system because it does not have to “quickly cool” your wort.

You would consider using a larger heat liquid tank?

You can consider adjusting the size of the heat liquid tank to 2.5 times the brewing capacity. Although it may cost 10%-15% more money, it is a very good choice. For example, if you currently have 1000l brewery equipment, then you need to buy a 2500l  heat liquid tank. The larger heat liquid tank ensures that you have enough hot water to meet your cleaning needs and continuous brewing.

What type of beer do you mainly brew?

Why determine in advance the beer style being brewed? Because different beer styles require different brewing processes. If you need to make lager beer, then you may need a larger cold liquid tank. This is because lager beer needs to be fermented at a lower temperature than ale beer, so you need more cold water to reach a lower fermentation temperature.
If you’re doing many heavy hopped beers, the whirlpool design may need modifying. When you’ve bigger hop loads having two inline hop filters side by side is advisable. If one gets clogged you can switch to the other filter with no downtime.
If the beer you brew has a high alcohol content, then you need a larger mash tank and lauter tank to increase the cost of grains.
If you mainly brew lager beer, you need to have a horizontal mature container, a larger cold liquid tank, and at least one dedicated bright tank, which helps to improve the production efficiency of the brewery.

What water do you use to brew beer?

For breweries, it is necessary to determine which craft beer can be produced based on the mineral content of the local water. In addition, the amount of water used to produce craft beer is also a problem.
Under normal circumstances, a brewery needs to use up to 7 gallons of water for every gallon of craft beer produced. The huge amount of water will make your brewery noticed by environmental supervisors, which may be an important issue that must be resolved. You need certain water-saving measures to reduce water usage.
In addition to water consumption, craft breweries must also try to manipulate water to produce certain types of beer. Most local craft breweries will have a reverse osmosis system, which can remove all minerals from the water in the area to produce perfect reverse osmosis water. Then, according to the type of beer, minerals are re-added to the water at a certain level. Finally, the re-made water is used for brewing. It should be noted that this process is very expensive.

What kind of filtering method is needed?

In order to extend the shelf life of beer, the beer needs to be sterilized. There are two ways to sterilize beer: pasteurization and sterile filtration.
Rapid pasteurization is the most commonly used microbial control method for commercial brewers, but this approach has certain limitations. The fast pasteurization method requires that the beer that has been carefully brewed for a long time is heated to a temperature above 70°C in a short time. This process does denature the spoilage organisms in the beer, but it also destroys the delicate flavor and characteristics of the beer.
Sterile filtration is a gentler alternative to rapid pasteurization. Sterile filtration eliminates undesirable contaminants while also maintaining the stability of microorganisms. Compared with untreated beer, the process of microbial stabilization and subsequent elimination of spoilage greatly extends the shelf life of beer, enabling beer manufacturers to transport products to longer distances in a longer period of time. In addition, the implementation of aseptic filtration eliminates all spoilage microorganisms but does not change or impair any desired characteristics and flavors obtained by the brewmaster.
In addition, because rapid pasteurization needs to heat such a large amount of liquid to 70°C, high power consumption is required, and when the rapid pasteurizer deviates from the critical flow rate, it will cause a large amount of water consumption and beer loss. The operating cost of all rapid pasteurization is much greater than that of sterile filtration.
