A clean-in-place (CIP) system is a combination of mechanical components and equipment used to combine water, chemicals, and heat to create a cleaning solution. These chemical cleaning solutions are pumped or circulated by the CIP system through other systems or equipment and clean the brewery equipment.
A good clean-in-place (CIP) system starts with great design and requires the creation of a customized and economical solution based on your CIP system needs. But keep in mind that an effective CIP system is not a one-size-fits-all solution. You need to custom design a CIP system incorporating the necessary information about the brewery’s brewing process, as well as the brewing requirements. This ensures that your clean-in-place system is designed to meet your cleaning requirements.

Design Considerations for CIP Systems

When designing a CIP system, several design requirements need to be kept in mind to ensure that the system is built to function fully as intended. Some key design considerations include:
  • Capacity: The size of the CIP system must be large enough to provide the flow and pressure needed to remove residues, reduce cycle times and flush effectively.
  • Utilities: Handling brewery equipment must have the utilities needed to run the CIP system.
  • Space Requirements: Local regulations and maintenance codes dictate the space required for portable and stationary CIP systems.
  • Drainage Requirements: Proper drainage is critical to cleaning operations. Additionally, drainage facilities must be able to handle high discharge temperatures.
  • Processing Time: The time it takes for a CIP system to run determines how many individual units are needed to meet demand.
  • Temperature: If protein is present in the processing system, a prewash operation should be performed at ambient temperature to ensure as much protein removal as possible without denaturing the protein.
  • Residues: Characterizing residues through cleaning studies and identifying relevant product contact surfaces aids in parameter development. Certain residues may require different cleaning solutions, concentrations, and temperatures for proper cleaning. This analysis can help organize circuits by common cleaning parameters.
  • Solution Concentrations and Types: CIP systems use different cleaning solutions and concentrations for different purposes. For example, caustic soda (also known as caustic soda, sodium hydroxide, or NaOH) is used as a cleaning agent in the circulation of most CIP systems in concentrations ranging from 0.5-2.0%. Nitric acid is typically used for descaling and pH stabilization in alkaline wash cycles, and its recommended concentration is 0.5%. In addition, hypochlorite solutions are commonly used as disinfectants.
  • Equipment Surface Properties: Internal finishing of CIP systems can help or hinder the accumulation of proteins and other contaminants within the system. For example, mechanical polishing operations can produce rougher surfaces than electropolishing operations, resulting in a higher risk of bacteria adhering to the material. When choosing a surface treatment, one must choose a treatment that minimizes the mechanical and chemical damage experienced during cleaning operations.
  • Cleaning processes and schedules: Knowing the experimental conditions of the equipment can provide insight into process hold or transfer times. Transfer lines and tanks may need to be connected and form a CIP loop for quick turnaround and cleaning needs.
  • Cleaning sequence: Typically, the cleaning cycle should start with a water rinse, followed by a detergent wash and a post-detergent rinse.
  • Transition Criteria: Defining Transition Criteria provides a way to control key cleaning cycle parameters. For example, chemical wash durations, minimum temperature set points, and concentration targets can all be set as desired before the wash step transitions to the next step.

Integration Considerations for CIP Systems

In addition to dealing with correct design and construction, correct integration is also important to achieve optimal cleaning performance of a CIP system. While a CIP system can be custom designed and built to meet the needs of a brewery, it may not perform as expected without proper integration. Therefore, it is necessary to consider how to integrate the CIP system from the planning process.
Some factors to keep in mind include:
  • Piping: Breweries need to consider the size and length of the piping, as major pressure drops can reduce flow and turbulence within the piping. CIP systems should use welding for connections, as threads or flanges can promote the accumulation of contaminants in the system. Additionally, the return line should be sloped as much as possible to promote gravity drainage and prevent the formation of air pockets, which would prevent the cleaning solution from reaching all surfaces.
  • CIP Chute: The CIP Chute contains the tanks needed for flushing and chemical solutions.
  • Filters: Filters in CIP systems are often difficult to drain. Therefore, they need to be periodically removed for cleaning or replacement operations before sterilization.
  • Accumulation: All system components should demonstrate free draining properties to avoid a “bathtub ring” effect.
  • Automation system design: The effective cleaning characteristics of the automation design of CIP systems also need to be reviewed. The cycle of developing and supplementing specific automation control systems can greatly reduce the long-term operating costs of a brewery.
